Try Southwest's and JetBlue's own websites as their flights are not on third party sites.
Are you looking for very specific dates? Weekend trips are probably always going to be a bit more expensive, but I found a weekend trip (Thur - Sun) in May on dohop.com for $239 per person. It's unlikely that you'll get below $200 for that flight in general, and almost definitely not on a weekend. Here's the link to what I found: http://www.dohop.com/?a1=New+York+%28JFK鈥?/a>
Hope that helps!
I suggest you keep checking. The prices change constantly. Use flexible dates. Mondays and Tuesdays seem to be the least expensive. I always use Orbitz and have the best of luck by just keep checking. I fly from Oregon to Florida all the time and I can always find flights for about $200.00.
Besides the major sites, try the individual carrier sites (especially those like Southwest who don't post on the cutrate air sites.) You'll probably have a much better selection coming into Jacksonville than Tallahassee - Tally's airport is on the smallish side with limited flights. Also, try booking flights on Tuesdays and Thursdays - those are usually among the cheapest prices.
